We’ll be the first to admit that there’s no shame in the leftover cold pizza for breakfast game. We’ve all been there...some maybe more than others...but, we digress. If you have some extra time on your hands to whip up something special, this breakfast pizza recipe is perfect for feeding a brunch crowd— or simply making your kids finally believe you really are kind of cool by letting them eat pizza for breakfast. Whichever the case, this is one that will hit the top of the request list time and time again.  

What You'll Need

  • 4 Happy Egg Free Range Eggs 

  • 1 pound store-bought pizza dough (or homemade) 

  • 1/2 cup pizza sauce 

  • 1/2 pound breakfast sausage 

  • 1 (8-ounce) block mozzarella cheese, grated 

  • Chopped chives, for garnish 

Directions

  1. Preheat your oven to 400. 

  2. In a medium skillet, brown the breakfast sausage over a medium-high heat until cooked through (about five minutes). 

  3. On a floured work surface, roll out the pizza dough. Place it in a lightly greased 13-inch cast iron skillet. If you use a larger skillet, the pizza will be a tad thinner, If you use a smaller one, you’ll have a thicker crust. Spoon the sauce over the dough and evenly sprinkle the sausage and mozzarella cheese on top. 

  4. Prebake for 10 minutes and remove the pizza from the oven. Gently crack one Happy Egg at a time into a bowl and then carefully pour it over the pizza spaced out from the other eggs. 

  5. Bake the pizza for 10-12 more minutes, until the egg whites have set but the yolks are still soft. Make that 13-15 minutes for firmer yolks and 8-10 minutes for softer. 

  6. Garnish with chopped chives and enjoy!
