If you aren’t eating Chilaquiles for breakfast on the regular, then where you at? Despite how fancy and delicious the final product looks, Chilaquiles are actually an easy traditional Mexican breakfast dish to whip up for yourself or a whole crew with ingredients you may already have on hand. Packed with flavor, it is one you will certainly want to add into your breakfast recipe rotation.
Ingredients

Happy Egg Heritage Eggs

2 ounces tortilla chips

5-6 Roma tomatoes

1 white onion, chopped

1 jalapeno
-
5 garlic cloves
-
1 tablespoon olive oil

3 chipotle peppers in adobo sauce (these come in a can)

Salt and pepper to taste

Suggested toppings: cilantro, red onions, avocado, queso fresco
Directions

Preheat your oven to 400° F and, on a sheet pan, roast tomatoes, onions, jalapeño, garlic cloves, olive oil, chipotle peppers and salt and pepper for 30-45 minutes.

Place it all in a blender and blend until smooth.

In a skillet, heat the sauce again and add in tortilla chips.

Toss to coat quickly, but don’t let them sit and get soggy.

Transfer sauce and chips to a plate. Then fry your eggs in the same skillet.

Top chilaquiles with fried eggs, cilantro, red onions, avocado and queso fresco. Serve immediately and enjoy!
