Make a batch ahead of time, stash them in your freezer, and you’ll have a hearty, delicious breakfast ready to grab, reheat, and go.

Ingredients

  • 2 tablespoons avocado or olive oil  

  • 1 bell pepper (any color works)

  • ½ large or 1 small yellow onion, diced  

  • 1 teaspoon garlic powder  

  • 1 teaspoon chili powder  

  • 16 ounces seasoned ground chicken sausage (Italian or breakfast)  

  • 2 tablespoons butter or oil 

  • 10 large Happy Eggs, whisked  

  • 8 burrito size flour tortillas (10 inch)  

  • 1 cup shredded cheddar cheese  

  • ½ teaspoon fine sea salt  

  • ¼ teaspoon fresh ground black pepper  

 

How to Make Freezer-Friendly Breakfast Burritos

1. Cook the Filling: Heat the oil in a large skillet over medium heat. Add the diced bell pepper, onion, garlic powder, and chili powder. Cook for 3-4 minutes, then add the chicken sausage and cook until browned. Remove from heat, drain any excess liquid, and let the filling cool.

2. Scramble the Eggs: In a separate skillet, melt the butter and gently scramble the eggs. Set aside and allow to cool.

3. Assemble the Burritos: To the tortillas add the shredded cheese, about two scoops of the sausage mixture, and one scoop of scrambled eggs. Fold the sides in, then roll tightly from the bottom up. (Yes, we took notes from Chipotle).

4. Store the Burritos: Wrap each burrito tightly in parchment paper, then foil. For an extra layer of airtight storage, place them in a container with a lid or a freezer bag. Freezer-friendly burritos will stay fresh and delicious in the freezer for up to 6 months. You can also store them in the fridge for up to 3 days.

  • Vegetarian Breakfast Burritos: Skip the sausage and load up on extra veggies like mushrooms, zucchini, or roasted sweet potatoes.

How to Reheat Freezer-Friendly Burritos

  1. From the Fridge: Unwrap the burrito and heat in the microwave for 1-2 minutes, flipping halfway, until warmed through. For a crispier tortilla, finish in a skillet over medium heat for 1-2 minutes per side.

  2. From the Freezer: Remove the burrito from its wrapping and microwave it on a plate for 1-2 minutes, flipping halfway. If desired, crisp it up in a skillet after microwaving.

  3. In the Oven: Preheat your oven to 350°F. Wrap the burrito in foil and bake for 20-25 minutes, or until heated through.
