Ingredients

  • 2 cups cooked rice (day-old rice works best)

  • 3 Happy Eggs, beaten

  • ½ cup diced onions

  • ½ cup frozen peas

  • 3 scallions, inner white part chopped, green parts saved for garnish

  • 2 tbsp soy sauce

  • 1 tsp chili oil

Directions
