Eggs Benedict is one of those classic breakfast dishes that most of us save for dining out at your favorite brunch spot, but it doesn’t have to be! This handy guide to making the Perfect Eggs Benedict will show you how to make one of the world’s most famous breakfasts at home like a pro!

Here’s how to make the Perfect Eggs Benedict right at home.

Ingredients

For the Hollandaise sauce:

  • 3 Happy Egg yolks

  • 2 teaspoons lemon juice

  • 1 teaspoon dijon mustard

  • Pinch of cayenne pepper

  • Pinch of salt

  • 1/2 cup unsalted butter, melted and hot

 

For the Eggs Benedict and assembly:

  • 2 Happy Eggs

  • 1 English muffin, split

  • 2 slices Canadian bacon

  • Fresh chives

  • Fresh dill

  • 1 tbsp unsalted butter (optional)

  • Splash of white distilled vinegar (optional)

  • Salt and pepper

Step 1: Make the Hollandaise Sauce

  1. In a blender, combine the Happy Egg yolks, lemon juice, Dijon mustard, cayenne pepper, and salt. Blend for just a few seconds until everything is combined.

  2. Melt the butter until it's hot and ready to pour (feel free to use a microwave or the stove). With the blender running, slowly drizzle the hot butter in until the sauce emulsifies and has a creamy texture. Pour into a bowl and cover to keep warm.

Step 2: Perfectly Poached Eggs

  1. Bring a medium pot of water to a gentle simmer. For smoother poaching, add a splash of vinegar. Create a whirlpool in the water with a spoon and gently crack an egg into the center.
  2. Let the egg cook for about 3 minutes, then use a slotted spoon to transfer it to a paper towel–lined plate. Repeat for the other egg, adjusting the simmer as needed for batch poaching.

Step 3: Assemble the Benedict

  1. Toast the English muffin halves until golden and crispy. 

  2. In a skillet, cook the Canadian bacon slices until the edges are slightly browned. Butter your muffin halves for a richer Eggs Benedict, or skip this step for a lighter dish.  

  3. Layer each toasted muffin half with a slice of Canadian bacon, followed by a perfectly poached egg. Pour that velvety Hollandaise sauce over each stack, and finish with a sprinkle of fresh chives, dill, and a touch of salt and pepper.

Tips

  • For a richer egg flavor, use Happy Eggs for the Hollandaise sauce and poached eggs. The golden yolks in Happy Eggs create the most luxurious taste.

  • If you have poaching the eggs, try using a silicone poaching ring.

  • For a more indulgent version, add a slice of avocado to the bottom of the English muffin.
