Savory sausage, golden potatoes, fresh veggies, and a perfectly fried Happy Egg come together to create a simple, satisfying breakfast that’s anything but boring. Packed with protein and healthy fats, this bowl isn’t just breakfast—it’s the fuel your morning needs.

 

Ingredients

  • 1 lb pork sausage  

  • 6-8 small gold potatoes, diced (about 2 cups)  

  • ½ white onion, diced  

  • ½ jalapeño, seeded and minced  

  • ½ tsp salt  

  • ½ tsp black pepper  

  • ½ tsp garlic powder  

  • ½ tsp chili powder  

  • Baby spinach  

  • Fried Happy Eggs   

  • Sliced avocado  

  • Equal parts ranch and hot sauce, for drizzling  



How to Make a Whole30 Breakfast Bowl

1. Brown the Sausage: Toss your sausage into a hot skillet and let it sizzle until it’s browned and cooked through. Transfer to a plate and set aside.

2. Cook the Potatoes: Add the diced potatoes to the same skillet. Cooking the potatoes in the sausage drippings will add so much flavor to the Whole30 Breakfast Bowl! Cook for about 5-7 minutes.  

3. Add Veggies and Spices: Add onion, jalapeño (if using), salt, pepper, garlic powder, and chili powder. Cook until the onions are soft and the potatoes are tender. 

4. Combine and Finish: Return the sausage to the skillet and give everything a good stir. Taste and add more spices if needed!  

5. Build Your Bowl: Spoon the hash into bowls, then get creative with toppings. Fresh spinach? Yes! A fried Happy Egg (or two)? Always a good idea! Sliced avocado and a drizzle of spicy ranch? Sounds good!
