Ingredients

  • 6 Happy Eggs

  • 6 slices of prosciutto

  • 1 tbsp olive oil

  • 1½ tsp Dan-O’s Italian Seasoning

  • ¼ cup grated parmesan cheese

  • ¼ cup mozzarella cheese

  • ¼ cup sun-dried tomatoes, chopped

  • Fresh basil, for topping

  • 2 cups leafy greens

  • Pinch of salt and pepper

  • Flaky sea salt, for garnish

Directions

  1. Preheat and Prep: Preheat your oven to 400°F. Grease your muffin tin or individual ramekins with olive oil, butter, or nonstick spray.

  2. Make the Prosciutto Cups: Line each muffin tin with a slice of prosciutto, pressing it into the bottom and up the sides to form a cup. Overlap the edges slightly if needed to fully cover. Don’t worry, it doesn’t have to be perfect!

  3. Season the Eggs: In a small bowl, whisk together the Dan-O’s Italian Seasoning, a pinch of salt, and pepper.

  4. Crack and Assemble: Carefully crack a Happy Egg into each prosciutto cup, taking care not to break the yolk. Sprinkle the seasoning mixture over the top of each egg.
