Berry French Toast Casserole made with Happy Egg is a love letter to breakfast. 

With a custardy, eggy center, swirls of cinnamon and sugar, and fresh berries, French Toast Casserole is the undisputed queen of special-occasion breakfasts. Drizzle it with your favorite syrup, dust it with sweet powdered sugar and serve as an easy Valentine’s Day breakfast (or any time you want to treat your family to an extra special breakfast).

Ingredients

  • 12 Large Croissants 

  • 6 Happy Eggs

  • 2 cups 2% milk

  • 2 tsp vanilla extract

  • 1 tsp cinnamon

  • 2/3 cup brown sugar

  • 1 cup strawberries sliced

  • 1/2 cup blueberries

  • Fruit butter of your choice

  • 1-2 tbsp powdered sugar

  • Maple syrup or boysenberry syrup 

Steps

  1. Cube the Croissants: Cut croissants into bite-sized cubes and bake at 350°F for 3-5 minutes, or until slightly crispy on the outside. Dry bread will make for a more custardy casserole. 

  2. Make the Egg Mixture: In a large bowl, whisk together Happy Eggs, milk, vanilla, cinnamon, brown sugar, and a pinch of sugar. 

  3. Prep the Casserole: Grease a 9×13” casserole dish with butter or oil. Add the bread cubes—pack the dish about ¾ of the way to the top. Then pour the egg mixture over the bread.

  4. Top with Berries: Add sliced strawberries, blueberries, or any other berries you like, along with a few dollops of your favorite fruit butter!  

  5. Let It Chill: Cover the dish and refrigerate for at least 4 hours (overnight is even better).

  6. Time to Bake: Preheat your oven to 350°F. Bake for 35–50 minutes, until golden and set.

  7. Sweet Touches: Sprinkle powdered sugar, drizzle maple syrup or boysenberry syrup, and serve warm.

Substitutions

  • Use non-dairy milk in place of cow’s milk. Almond milk or oat milk make this a dairy-free French toast recipe.
