Born from the idea in 2000s’ foodie culture that everything tastes better with a rich, orange yolky egg, ‘eggsluts’ had a reputation for adding an egg to classic dishes like burgers, pastas, and sandwiches. And let's be honest, who doesn't love a little yolk explosion in every bite?!

Why Everyone Loves EggSlut’s Signature Dish, ‘The Slut’

Eggslut’s signature dish has reached icon status. In fact, there’s a good chance you’ve seen this drool-worthy dish all over your social media. While the dish itself is pretty simple: a perfectly coddled egg served on a creamy potato puree, it's so much more than that. 

Picture dipping a piece of warm baguette into a perfectly soft yolk and creamy, buttery chive-filled potato puree. The gooey yolk, the velvety potatoes, the crusty bread, it’s practically irresistible! 

Ingredients

(serves 4)

  • 1/4 cup fine sea salt

  • 1 pound russet potatoes, peeled and cubed

  • 1 tsp minced garlic

  • ½ cup heavy cream

  • 10 tablespoons unsalted butter, softened

  • Kosher salt

  • 4 Happy Eggs

  • 2 tablespoons thinly sliced fresh chives

  • 8 ¼-inch-thick slices baguette, cut on a diagonal, toasted

Note: This recipe requires 4 half-pint mason jars with sealable lids.

 

Directions

  1. Boil 7 quarts of water in a large stockpot, adding the sea salt. Toss in the diced potatoes and cook them until fork-tender. 

  2. In a pan gently heat minced garlic, heavy cream, and chives.

  3. Drain the potatoes, and to a bowl add the potatoes, the creamy garlic mixture and butter, and puree them until velvety smooth. Salt to taste.

  4. Pipe the potato purée into the mason jars, filling them about one-third full. Crack a Happy Egg into each jar on top of the purée, sealing the lids until they’re finger-tight. Simmer the reserved water, then gently place the jars back in to simmer for 15 minutes, until the egg whites are set.

  5. Remove the jars, take off the lids, and sprinkle with more chives and little extra sea salt. Serve with toasted baguette slices for that perfect scoop!
