If you're a fan of the hit TV show The Bear, you probably remember the omelet scene in Season 2. This dish, prepared with creamy Boursin cheese and topped with crunchy potato chips, had a viral moment and became an overnight sensation. Now, you can make a copycat version at home using Happy Eggs!

Why ‘The Bear’ Omelet is an Icon-in-the-Making

Ingredients

  • 3 Happy Eggs

  • 1–2 tablespoons salted butter, plus more for serving

  • Boursin cheese (about 2 tablespoons)

  • Fresh chives, thinly sliced

  • Sour cream and onion potato chips, gently crushed

  • Salt and freshly ground black pepper, to taste

Directions

  1. Prepare the Eggs: Place a fine-mesh sieve over a bowl. Crack your Happy Eggs into the sieve and whisk with a fork until all the egg has strained through. Don’t skip this step, it’s what gives ‘The Bear’ Omelet a smooth, velvety texture.

  2. Heat the Pan: In a nonstick skillet over medium-low heat, melt 1–2 tablespoons of salted butter, swirling to coat the pan evenly.

  3. Cook the Eggs: Pour the whisked eggs into the skillet. Using a rubber spatula, gently stir the eggs, creating small curds. Continue cooking until the eggs are mostly set but still slightly runny on top.

  4. Add the Cheese: Pipe or spoon a line of Boursin cheese down the center of the omelet.

  5. Fold the Omelet: Carefully fold one side of the omelet over the cheese, then continue to roll it into a cylinder. Slide the omelet onto a plate, seam side down.

  6. Garnish and Serve: Brush the top of the omelet with a bit more butter. Sprinkle with thinly sliced chives and crushed sour cream and onion potato chips. Season with salt and freshly ground black pepper to taste.
