8 Happy Egg egg yolks

1 Can Evaporated milk
2 cups Heavy Cream

2. Heat the Milk: In a saucepan, bring evaporated milk to a simmer.
3. Combine Eggs and Milk: Remove from heat, and slowly add the hot milk to the egg mixture, mixing continuously.
4. Return to Heat: Return the mixture to the saucepan, and heat until the temperature reaches 180 degrees Fahrenheit. Whisk constantly until mixture becomes custardy, then let cool. Do not overheat, or the eggs may scramble.
5. Whisk the Cream: Using a mixer, beat the heavy cream until stiff peaks form.
6. Fold Egg Mixture into Cream: Slowly fold the egg mixture into the cream. (Anyone else hear “Just fold it in, David!” in Moira’s voice, or is that just us?)
7. Freeze: Pour the mixture into silicone ice trays and freeze until firm (about 4 hours).
8. Blend Ice Cream Cubes: Using a food processor or blender, blend frozen cubes with peppermint candies until smooth (about 1 minute).
