Ingredients

Rösti:

- 2 large russet potatoes 

- 2 tablespoons olive oil 

- 2 tablespoons unsalted butter (optional)

- 1 small onion, finely grated or chopped

- 1/2 teaspoon cumin

- 1/2 teaspoon paprika

- Salt and freshly ground black pepper, to taste

Poached Eggs:

- 2 large Happy Eggs (1 per serving)

- 1 tablespoon vinegar

- Salt, to taste

Yogurt:

- 1/2 cup plain Greek yogurt (or Turkish yogurt if you have it)

- 1-2 small garlic cloves, minced (optional, for extra flavor)

- 1 lemon

- 2 sprigs mint

- Salt, to taste

Chili Oil:

You can purchase pre-made chili oil if desired.

- 1 tablespoon olive oil

- 1/2 teaspoon paprika (smoked or sweet)

- 1/4 teaspoon red pepper flakes (or Aleppo pepper for a Turkish touch)

Mixed Greens:
